Beef and Bean Dip

A hearty dip, great for any occasion.

INGREDIENTS:

  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1/2 cup ketchup
  • 1 teaspoon chili powder
  • dash of ground cayenne pepper, or to taste
  • 1 teaspoon salt
  • 1 small can (4 ounces) chopped mild green chile, drained
  • 1 can (about 16 ounces) undrained red kidney beans
  • 1 cup shredded American cheese
  • tortilla chips

PREPARATION:

Directions for beef and bean dip. Cook ground beef with 1/2 cup chopped onion until meat is browned and onion is tender. Stir in ketchup, chili powder, and salt. Add chopped chile and beans; mash mixture well. Heat through; top with cheese and remaining 1/2 cup chopped onion. Keep beef and bean dip warm in chafing dish, fondue pot, or crockpot. Serve beef and bean dip with chips.
Makes 4 cups of beef and bean dip.
