Spinach Casserole

This easy spinach casserole is topped with shredded cheese.

INGREDIENTS:

  • 2 packages (10 ounces each) frozen chopped spinach (or about 3 cups cooked and drained)
  • 2 slices bacon, cooked and crumbled
  • 1 can or jar (about 4 ounces) sliced mushrooms, drained
  • 1/4 teaspoon dried oregano
  • 1 cup (8 ounces) sour cream
  • 1/2 cup shredded sharp Cheddar cheese

PREPARATION:

Directions for spinach casserole
Cook spinach following package directions; drain. Combine spinach, crumbled bacon, mushrooms, oregano, and sour cream. Spoon spinach casserole mixture into a greased 1 1/2-quart casserole. Bake spinach casserole at 325° for about 20 minutes; sprinkle with shredded cheese and return spinach casserole to oven for 5 minutes longer, or until cheese is melted.
Spinach casserole serves 6.
