Shrimp scampi is always a favorite, and so easy! Serve this scampi as an appetizer with toothpicks.

Ingredients

  • 2 pounds extra large shrimp (26 to 30 per pound), peeled and deveined

  • 1/3 cup olive oil

  • 1/3 cup dry vermouth

  • 2 large cloves garlic, crushed

  • 3/4 teaspoon salt

  • 1/2 teaspoon freshly ground black pepper

  • 3 tablespoons finely chopped parsley fresh

  • 3 tablespoons freshly squeezed lemon juice

Steps to Make It

  1. Heat oil over medium-low heat in a large skillet.

  2. Sauté shrimp; add vermouth, garlic, salt, and pepper; simmer until liquid is almost evaporated.

  3. Sprinkle with parsley and lemon juice.

  4. Gently stir and serve with toothpicks as an appetizer or serve with hot cooked rice or pasta.
