Ingredients:
- 4 turkey cutlets
- 1/4 cup flour
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 egg
- 2 tablespoons water
- 1 cup finely crumbled fresh bread crumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- chopped fresh parsley, for garnish
Preparation:
Rinse the turkey cutlets and pat dry. In a wide shallow bowl, stir together flour, salt, and pepper. In a second shallow bowl, beat together the egg and water. In a third shallow bowl, combine the fresh bread crumbs and Parmesan cheese. Dip each turkey slice first in the flour mixture, next in the egg mixture, and then in the fresh bread crumb and Parmesan cheese mixture.Put butter and olive oil in a large skillet over medium high heat. When skillet is hot, add the coated turkey slices to the and cook for 2 to 3 minutes on each side, or until no longer pink. Transfer the turkey to a serving platter. Garnish turkey cutlets with chopped parsley.
