Easy Minestrone Soup Recipe

INGREDIENTS:

  • 2 envelopes or teaspoons instant beef broth granules
  • 3 cups boiling water
  • 4 ounces shredded vegetables for coleslaw
  • 2 tablespoons dried celery flakes
  • 1 tablespoon dried parsley flakes
  • 1/2 cup chopped onion
  • 1 can (14.5 ounces) diced tomatoes
  • 1 bay leaf
  • 1 teaspoon leaf oregano, crumbled
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

PREPARATION:

Dissolve instant beef broth in boiling water. Add coleslaw vegetables, celery flakes, onion, tomatoes, bay leaf, oregano, salt and pepper. Cover and simmer until vegetables are tender, about 15 minutes.
Makes 6 servings of fat free minestrone soup.
