INGREDIENTS:

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 eggs
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 2 cups peeled, diced apples
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon

PREPARATION:

Cream together shortening, sugar, vanilla, and salt. Add eggs and beat well. Into a separate bowl, sift together flour, baking powder, and soda; add to creamed mixture alternately with sour cream. Fold in diced apples.

Pour batter into a greased 13x9x2-inch pan. Sprinkle top evenly with chopped walnuts. Combine brown sugar and cinnamon; sprinkle over the chopped walnuts. Bake apple sour cream coffee cake at 350° for 25 to 30 minutes.
