INGREDIENTS:

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1 cup molasses
  • 2 1/4 cups all-purpose flour, sift or stir before measuring
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 cup hot water

PREPARATION:

Cream shortening and sugar together until light; add unbeaten egg and beat well. Mix baking soda with molasses; stir into creamed mixture. Sift dry ingredients together; add gradually to batter, stirring until just thoroughly blended. Add the hot water gradually, stirring until mixture is smooth. Don't over-beat. Pour into a greased 8- or 9-inch square pan and bake at 325° for 45 to 50 minutes.
Serve gingerbread with a dollop of whipped topping or sweetened whipped cream.
Makes about 1 dozen portions.
