INGREDIENTS:
PREPARATION:Thread cubed ham, sweet potatoes, and green pepper squares alternately on 6 skewers. Brush kabobs with Pineapple Sauce (below). Grill over medium coals for 15 to 20 minutes, brushing with sauce frequently. Serve with rice and remaining sauce. Makes 6 servings. Pineapple Sauce: In small saucepan, combine cornstarch and 2 tablespoons of the pineapple concentrate; stir until smooth. Stir in the remaining pineapple concentrate, the chili sauce, honey, and oil. Cook, stirring constantly, until sauce begins to to boil. Boil for about 1 minute.
