Turkey with Pasta

Turkey casserole recipe with pasta, tomatoes, sliced carrots and celery, and other ingredients.

INGREDIENTS:

  • 1 1/2 cups thinly sliced carrots
  • 1 cup thinly sliced celery
  • 1/3 cup chopped onion
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 2 to 3 cups cubed cooked turkey
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 large can (15 ounces) tomato sauce
  • 1 cup dry white wine or chicken broth
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups uncooked ziti or similar pasta, cooked and drained

PREPARATION:

In a large skillet over medium low heat, sauté carrots, celery and onion in the oil until tender, but not browned; add minced garlic and sauté 1 minute longer. Add turkey, tomatoes, tomato sauce, wine or broth, parsley, basil, salt, and pepper. Simmer, uncovered, for 20 minutes. Toss hot cooked ziti with the hot sauce.
Turkey recipe serves 4.
