INGREDIENTS:
PREPARATION:Fit pie crust into 9-inch pie plate and prick in several places with a fork.
Bake crust at 400° for 5 minutes. Whisk together eggs, milk, mayonnaise then stir in Cheese, green chiles, salt and pepper. Set aside. Saute potato and 1/3 cup of green onions in skillet in hot oil, until tender and browned. Spoon potato mixture into crust, then pour egg mixture over potato. Bake at 350° for 40 minutes, or until set.
For salsa, combine tomato, chopped green pepper, minced jalapeno and sliced green onions. If desired, add a little fresh chopped cilantro. Serve salsa cold with room temperature quiche.
