Ingredients:
- 2 tablespoons bacon drippings
- 2 tablespoons all-purpose flour
- 1 small onion, minced
- 1 cup water
- 1/2 teaspoon powdered mustard
- 2 tablespoons vinegar
- 16 ounces fresh spinach, cleaned, drained and chopped
- salt and pepper to taste
Preparation:
Melt bacon drippings. Stir in flour and onion. Gradually stir in water, mustard, and vinegar. Cook over low heat, stirring constantly, until smooth and thickened. Pour hot dressing over spinach. Toss to mix well; season to taste.
