Cranberry Orange Oat Muffins

Cranberry muffins are made with cranberry orange relish, oats, brown sugar, butter, and other ingredients.

Cook Time: 15 minutes

Ingredients:

  • 1 cup sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons light brown sugar, firmly packed
  • 1 cup quick cooking oats
  • 1 egg, beaten
  • 2 tablespoons melted butter
  • 1/3 cup evaporated milk
  • 3/4 cup cranberry orange relish, purchased or homemade

Preparation:

Preheat oven to 425°. Into a mixing bowl, sift together flour, baking powder, soda, and salt. Sit in brown sugar and oats. Add egg, melted butter, milk, and cranberry relish. Stir until dry ingredients are moistened. Fill greased and floured muffin cups 2/3 full. Bake cranberry muffins at 425° for 12 to 15 minutes.
