Hot Bacon Dressing

A hot bacon salad dressing recipe, great on spinach salads or other vegetable salads.

INGREDIENTS:

  • 4 strips bacon, diced
  • 1 hard-cooked egg, separated
  • 1/4 cup half-and-half or cream
  • 1/3 cup vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon mixed salad herbs; basil, tarragon, parsley, chives, etc.
  • salt and pepper to taste

PREPARATION:

Cook the diced bacon until crispy. In a saucepan, combine 2 tablespoons of bacon drippings, the mashed hard-cooked egg yolk, cream, vinegar, sugar, mustard, garlic salt, and herbs. Add salt and pepper to taste. Add finely chopped egg white and bacon then heat mixture through. Cool slightly then pour over mixed greens, spinach, or lettuce.
