Filled Spice Cookies

Molasses spice cookies are filled with preserves.

Cook Time: 8 minutes

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/3 cup molasses
  • 2/3 cup light corn syrup
  • 4 1/2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • preserves
  • candied cherries, halved, optional

Preparation:

Cream butter and sugars until light; beat in molasses and corn syrup. Add sifted dry ingredients; mix well. Chill dough until firm enough to roll, about 2 hours. Roll half of the dough to about 1/2-inch thickness; cut with 3-inch round cutter. Roll remaining half of dough to 1/8-inch thickness and cut with a 3-inch flower cutter or other fancy 3-inch cutter. Bake all cookies in a 375° oven for about 8 minutes. Cool. Spread round cookies with preserves then top with fancy cookies. Press a cherry half in center of each cookie, if desired. Makes about 4 dozen cookies.
