Burrito Burgers

These burrito burgers will be the hit of your cookout.

Burrito or taco seasoning flavors these delicious, juicy burgers, along with a layer of refried beans and Tex-Mex style toppings. 

For condiments, use a chipotle mayonnaise or salsa, or top the burgers with sour cream or guacamole.

Ingredients

  • 1 1/2 pounds ground beef (80% to 85%*)

  • 4 tablespoons burrito seasoning, or taco seasoning

  • 1 to 2 tablespoons cilantro, fresh, chopped, optional

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 4 to 6 slices pepper jack cheese

  • 4 to 6 hamburger buns

  • 1 (15-ounce) can refried beans

Steps to Make It

  1. Heat the grill to high heat, or about 450 F if the grill has a built-in thermometer. (See below for broiling instructions.)

  2. Combine the ground beef with the burrito or taco seasoning and cilantro, if using; blend well. Indent the center of each burger patty with a finger or thumb. The burgers will cook more evenly and won't swell as much in the center.

  3. Shape the ground beef into four 6-ounce burgers or six 4-ounce burgers. 

  4. Sprinkle the burgers lightly with salt and freshly ground black pepper.

  5. Grill the burgers over the hottest part of the grill for about 2 to 3 minutes on each side to sear, then continue cooking over an area of the grill with less direct heat for about 5 to 7 minutes longer, or until the burgers are cooked through. 

  6. Top with the cheese and cook just until the cheese has melted.

  7. In a saucepan over low heat, warm the refried beans.

  8. To assemble, spread each toasted bun bottom with a generous layer of refried beans, then top with a burger. Spread the burger with salsa, sour cream, guacamole, or chipotle mayonnaise, then ​shredded lettuce,  tomato slices, and onion, if using.  

Prep Variation

Broiling Instead of Grilling:

  • Place the burgers on the oiled rack of a broiler pan. Arrange the rack about 4 inches from the heat source.
  • Heat the broiler to 500 F (or High).
  • Broil the burgers for about 3 minutes. Flip and broil for 6 to 8 minutes longer, or until the burgers register at least 160 F on a food thermometer.

Glass Bakeware Warning

Do not use glass bakeware when broiling or when a recipe calls to add liquid to a hot pan, as glass may explode. Even if it states oven-safe or heat resistant, tempered glass products can, and do, break occasionally.

Recipe Tip

  • *For the juiciest, most flavorful burgers, 80% to 85% ground beef is the best choice. More fat is the key to juicier, tastier burgers. If you are using leaner ground beef, you can add extra fat and moisture. Mix about 1 1/2 tablespoons of oil into the ground beef. Or, add a tablespoon or two of broth or tomato juice to the meat mixture.
