Apples and cranberries are meant for each other, especially when they're paired in desserts such as this apple cranberry cobbler. The natural sweetness of apples plays off the tartness of cranberries for a festive and sweet-tart dessert that is not hard to put together.

We used a combination of Granny Smith and Golden Delicious apples in this cobbler, but you can use whatever firm apples you have on hand such as Fuji, Pink Lady, or Braeburn, for example. You want ones that not fall apart when baking. Bake this dessert for a special event, potluck, or family dinner throughout the fall and winter, when cranberries are in season. (You can also make this recipe with frozen cranberries if you like.)

Ingredients

  • 7 cups apples, peeled, cored, thinly sliced

  • 1 1/2 cups fresh cranberries

  • 2 tablespoons lemon juice

  • 3/4 cup sugar

  • 1/2 cup brown sugar

  • 3 tablespoons all-purpose flour

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1/3 cup apple juice

  • 1 teaspoon vanilla extract

  • 1 tablespoon butter, soft

For the Topping:

  • 3/4 cup all-purpose flour

  • 1/2 cup sugar

  • 1 scant teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 large egg

  • 2 tablespoons cream, or evaporated milk, or half-and-half

  • 2 tablespoons butter, melted

Steps to Make It

Make the Apple Cranberry Filling

  1. Gather the ingredients.

  2. Grease a 2 1/2- to 3-quart baking dish. Preheat oven to 375 F.

  3. Toss sliced apples with cranberries and lemon juice.

  4. In a bowl, combine the 3/4 cup granulated sugar, 1/2 cup brown sugar, 3 tablespoons all-purpose flour, 1 teaspoon cinnamon, and 1/2 teaspoon salt; add to the apple mixture and toss to coat. Mix in the apple juice and vanilla.

  5. Arrange the apple mixture in the prepared baking dish. Dot with the soft butter.

Make the Cobbler Topping

  1. To make the topping, in a mixing bowl, combine 3/4 cup flour, 1/2 cup sugar, 1 scant teaspoon baking powder, and 1/4 teaspoon salt.

  2. In a separate small bowl, whisk the egg with cream and melted butter; stir into the dry ingredients and beat until smooth.

  3. Using a tablespoon, drop spoonfuls of the batter evenly over the fruit mixture. The batter will spread as the cobbler bakes.

  4. Bake for 40 to 50 minutes, until fruit is tender and topping is nicely browned.

  5. Serve and enjoy!
