Hot Cross Muffins

An extra easy version of an Easter favorite.

Cook Time: 18 minutes

Ingredients:

  • 2 cups packaged biscuit mix
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs, slightly beaten
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 2 teaspoons finely grated orange peel
  • 1/2 cup currants or raisins, soaked in hot water to plump, drained

Preparation:

Mix biscuit mix, sugar, salt, cinnamon, eggs, milk, oil, and orange peel. Add plumped raisins or currants. Grease 12 muffin cups or line with paper baking cups. Fill cups 2/3 full. Bake at 400° for 15 to 18 minutes. Make vanilla icing and drizzle or pipe over muffins to make cross shapes. Makes 12 hot cross muffins.
