Ingredients:
- 1 egg, slightly beaten
- 3/4 cup buttermilk
- 1 tablespoon vegetable oil
- 1 cup sifted all-purpose flour
- 1/2 teaspoon curry powder
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 3 to 4 pounds chicken pieces, or 1 fryer, cut up
- vegetable oil for deep frying
Preparation:
Combine egg, buttermilk, and 1 tablespoon of oil. Sift together the flour, curry powder, salt, and pepper. Blend flour mixture into the buttermilk mixture; beat until smooth. Dip chicken pieces into batter; drain. Cook battered chicken in deep 350° oil for about 12 minutes, or until chicken is done.Fried chicken recipe serves 4 to 6.
