Ingredients:
- 3 large onions, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 pound lean ground beef
- 2 cans (14.5 ounces each) tomatoes
- 1 can (4 ounces) chopped green chile peppers
- 1 can (4 ounces) sliced mushrooms with liquid
- 1 can (4 to 7 ounces) chopped ripe olives
- 16 ounces shredded American or Mild Cheddar Cheese
- 1 pound spaghetti, cooked according to package directions
- grated Parmesan cheese
Preparation:
Slowly cook the onions and garlic in oil and butter for about 20 minutes, or until tender and golden, stirring frequently. Add ground beef, breaking up with a fork; brown lightly. Add tomatoes and green chile peppers. Cover and simmer 45 minutes. Add mushrooms and olives; cook 15 minutes longer then stir in cheese. In a large greased casserole or lasagna pan, mix ground beef mixture with spaghetti. Sprinkle with grated cheese and bake at 375° for 30 minutes.Serves 6 to 8.
