Sweet Potato Pone

Sweet potato pone recipe with milk and eggs, along with spices and butter.

INGREDIENTS:

  • 2 cups finely grated raw sweet potatoes
  • 1 cup evaporated milk
  • 2 eggs, well beaten
  • 3/4 cup dark corn syrup
  • 1/4 cup melted butter
  • 1 teaspoon grated lemon rind
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup brown sugar

PREPARATION:

Mix the grated sweet potatoes with the milk to prevent discoloring. Combine the ingredients in order given. Pour into a greased shallow baking pan. Bake in a 350° oven for 30 minutes; stir with a fork. Bake 15 minutes longer or until browned and crusty on top.
Serves 6.
