Since early 1995 Nick has been the Executive Chef at the historic Beaumont Inn in Harrodsburg, Kentucky. He came to central Kentucky from his hometown of Louisville to accept the Chef's position at Roy & Nadine's in Lexington. There he helped establish it as one of the area's premier restaurants. Prior to that he had led the kitchen at Louisville's acclaimed Billy Dee's.

After a fifteen year career as a professional musician, Nick entered into commercial cooking in 1984. After working in the kitchens of such exciting Louisville restaurants as Jack Fry's and Timothy's for several years he decided to attend the culinary program at Sullivan College. He obtained his degree in 1989 as part of the school's second graduating class.

An experienced cooking teacher, Nick has taught at Kroger's School of Cooking in Lexington since 1991. He also had the honor of conducting the very first graduate demo-lecture at his alma mater Sullivan College. Recently he has been working on the "Cooking with Chef Nick" classes being offered at Beaumont Inn.

Recent television appearances include WLEX's Kentucky Sunrise, WHAS's Good Morning Kentuckiana, WKYT's Afternoon, and Lexington's What's Cooking In Kroger's Kitchen?.

Lately Nick has turned his attention to writing a cookbook that will contain recipes reflecting his varied background.

Nick enjoys the freedom he has at Beaumont Inn. His challenge is to serve a mixture of classic Kentucky dishes and innovative foods which appeal to a wide range of tastes. His basic approach is "Choose the freshest ingredients, prepare foods using proper cooking techniques and blend flavors that complement each other".
