Pinto Bean Pie

This pinto bean pie recipe is made with coconut and nuts. This pie was shared on our forum.

Ingredients:

  • 1 cup cooked pinto beans, mashed with a little of the cooking liquid
  • 1 1/3 cups coconut (small can)
  • 1 cup chopped pecans
  • 4 eggs
  • 3 cups granulated sugar
  • 1 tbsp vanilla
  • 2 sticks melted butter or margarine
  • 3 unbaked 9" pie shells

Preparation:

Mix all ingredients together and pour into pie shells. Bake for 1 hour in a 300° oven. Makes three 9-inch pies.
