Mini Pita Chicken Sandwiches

PREPARATION:

From Shi:
I was asked to make sandwiches for a bridal shower last year, and I wanted to make something different than the typical egg salad on white bread cut into triangles.

So I poached some chicken breasts, chopped up the meat and added some chopped cucumber and mayo, a tiny amount of mustard, a bit of onion and garlic powder too. I put a little lettuce into each mini pita bread, stuffed them with a bit of the chicken mix and added a tiny wedge of tomato to garnish. People raved about them! And it was so simple!
