Surprisingly Easy & Tasty, Member BLDaily

After searching my favorite cookbooks and websites for an easy recipe, I found this one by accident. Since I am vegan and gluten intolerant, I replaced the butter with Earth Balance and the flour with Bob's Redmill Gluten Free All Purpose Baking Flour. I was skeptical since the recipe has no eggs and does not call for an egg replacer. The results are stunning! A delicious moist cake that is exciting enough for dessert! I imagine the original ingredients will make an even more delightful product. Love that the cake can be made in a single bowl, and that no special equipment is required. It took a mere 15 minutes to put it together! LOVE it!
