Apple Walnut Cake and Vanilla Glaze

This old-fashioned apple cake is made with whole wheat flour and all purpose flour, and walnuts, with a vanilla glaze.

Cook Time: 1 hour

Total Time: 1 hour


  • 1 1/4 cup all-purpose flour, stir before measuring
  • 1 cup whole wheat flour
  • 3/4 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 3 eggs
  • 2 cups finely chopped peeled apples
  • 1 cup chopped walnuts
  • Vanilla Glaze, below


In a large mixing bowl, blend all ingredients except chopped apples and walnuts with electric mixer. Stir in chopped apples and nuts. Pour into a generously greased and floured 10-inch Bundt cake pan or tube pan. Bake at 325° for 55 to 65 minutes, until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes; turn out onto serving plate to cool completely. Drizzle with a vanilla glaze.

Vanilla Glaze

  • 1/2 cup confectioners' sugar
  • 1/4 teaspoon vanilla
  • 2 to 3 tablespoons milk
Blend all ingredients until smooth. Drizzle over cake.

This cake has become my lil signature recipe. My whole family loves it! I have been making this now for about five years. It's mostly a holiday thing and one of the reasons my family can't wait for the holiday season to begin. It's soooo good they even eat it as a breakfast bread with butter on it. I have made a number of these cakes for my wife for work at her hair salon, and none ever comes home! Lol It's gotten to the point that when I make one for her salon, I have to make one for the kids here at home. I tried something new last night. I replaced the granulated sugar for splenda for my wifes company picnic. I love that everyone loves this that much. The cake for the picnic today was actually a request from the wifes coworkers. I don't use the whole wheat flour. I just use 2 1/4 cups regular all purpose flour. I also use about four cups of chopped apples instead of two. I use my kitchenaide mixer with one of those ""squeegee"" beaters. The better mashes some of the apples into the mix. We all love it! Well, whoever you are that posted this recipe, thanks for the fame! Thanks for showing me how it feels to have my cooking appreciated SO much ;) lol a stay at home dad!
