Frosted Apple Bars

If you're looking for a simple recipe for fresh apples, this cake is a great choice.

Ingredients:

  • 1 cups sifted all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon finely grated lemon peel
  • 2/3 cup shortening
  • 1 egg, slightly beaten
  • 4 tart apples, peeled, cored, and sliced, about 2 cups
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon milk
  • .
  • Vanilla Glaze
  • 2 cup confectioners' sugar
  • 1 tablespoon plus 2 teaspoons milk
  • 1/2 teaspoon vanilla

Preparation:

Combine flour, 1/2 cup sugar, salt, and lemon peel. Cut in shortening until mixture is like meal, then stir in the egg. Pat half of the crumb mixture, about 1 1/2 cups, into a buttered 9-inch square baking pan. cover with the apple slices, the 3/4 cup granulated sugar, and sprinkle with cinnamon. Stir the milk into remaining crumb mixture and spoon or sprinkle over apples. Bake at 375° for 45 minutes, until apples are tender. Frost with easy glaze.

For glaze, combine 1 cup confectioners' sugar with 1 tablespoon plus 2 teaspoons of milk and 1/2 teaspoon vanilla. Add a few drops of milk if necessary to thin more. Frost warm apple bars.

Frosted Apple Bars, Member 12quilt

I made these bars. My husband thought they were absolutely delicious and was willing to eat the entire pan in one sitting. I'm glad I cut down on the sugar a bit because I thought they were a little sweeter than I like. My only problem was the slightly beaten egg, which I had out to add, and when I had the batter all set for the oven, I saw the egg on the counter so it never went into the recipe. But it was stilll good.
