No-Crust Apple Pie

An apple pie with no crust, made with Bisquick, vanilla, eggs, butter, and chopped apples.

Cook Time: 55 minutes

Ingredients:

  • 4 cups finely chopped apples
  • 2 tablespoons lemon juice
  • 2 eggs
  • 1 cup sugar
  • 1/4 cup melted butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 1/2 cup biscuit mix (Bisquick)
  • 1 1/2 cups milk

Preparation:

Sprinkle lemon juice over apples. Beat or process in blender or food processor, the eggs, sugar, butter, spices, salt, vanilla, Bisquick, and milk. Blend well. Stir in chopped apples (do not process) and pour into a greased, 10-inch pie pan. Bake at 350° for 50 to 55 minutes, or until set. A knife inserted into center should come out clean.

"I give this three stars as the amount has to be off on the bisquick. The pie after 1 1/2hrs in the oven was still liquidy (but the top dried out) even after adding 1/3c more bisquick to the recipe. I figured this would be the case when after following the recipe the mixture was all liquid. This has the consistency of bread pudding when baked with that amount (the extra 1/3c), which I would guess was not what was intended. Maybe adding another cup of bisquick or eliminating half of the milk would work. It tasted ok and I imagine it would be good with modifications which is why I did not rate this lower as I would give this only one star with the recipe as written. I also drizzled carmel and added pecans on top which made it better."
