- 1 Gala apple, cored, not peeled, chopped
- 1 peach, peeled, pitted, chopped
- juice of 1 medium lime, about 2 to 3 tablespoons
- 1 tablespoon apricot preserves
- 3 green onions, sliced thinly
- 1 tablespoon minced purple onion
- 1 tablespoon minced red bell pepper
- 1 jalapeno pepper or mild pepper, seeded, membranes removed, minced, or ground red pepper to taste
- 2 tablespoons minced fresh cilantro
Preparation:
Serve with ham, pork, or grilled or broiled fish.
