Apple Charlotte

An apple dessert recipe with buttered toast, apples, and other ingredients, along with a meringue topping.

Ingredients:

  • 5 slices buttered toast, crusts trimmed
  • 3 large tart apples
  • 1/2 cup orange marmalade
  • granulated sugar, to taste
  • egg whites for thick meringue
  • juice of 1 lemon
  • juice of 1 orange
  • finely grated orange and lemon rind
  • .
  • Meringue:
  • 2 egg whites
  • 1/4 cup granulated sugar

Preparation:

Core and slice apples. Place the apples in buttered casserole, sprinkle with sugar, then cover with layer of buttered toast (cut toast to fit). Place another layer of apples and sugar and sprinkle with lemon and orange grated rind and juice. Spread remaining slices of toast with half of the marmalade, then layer over the last apple and citrus layer. Bake at 350° for about 45 minutes. Make a meringue with 2 egg whites and 1/4 cup granulated sugar, spoon over pudding, and dot with remaining marmalade. Bake at 350° for about 8 minutes, or until nicely browned.
Serves 6.
