Lunch Box Sour Cream Cookies

Lunch box cookies are butter sour cream cookies topped with cinnamon sugar and pecan halves.

Total Time: 10 minutes

Ingredients:

  • 3/4 cup butter
  • 1 1/2 cups sugar
  • 1 egg
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 3 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup sugar or cinnamon sugar
  • pecan halves

Preparation:

Cream butter and sugar until light and smooth. Add egg; beat until fluffy. Stir in sour cream and vanilla. Sift together the flour, salt, baking soda, and baking powder. Stir sifted dry ingredients into the creamed mixture. Chill for 1 to 2 hours.

Place small balls of dough onto greased baking sheet. Grease bottom of a glass then dip in sugar or cinnamon sugar. Press each ball of cookie dough into a thin circle with sugared bottom of glass. Press a pecan half into the top of each cookie. Bake at 350° for 8 to 10 minutes, or until lightly browned. Remove to racks to cool.
Makes about 5 dozen cookies.

i have made these 3 times. #1 i used the butter and found the cookies came out hard as rocks, i put a piece of apple in the plastic bag overnite and they were soft the next day. # 2 &3 i used bluebonnet margarine for the butter i also shook the balls in a bag of cinnamon sugar squshed with glass dipped in cinnamon sugar they came out perfect soft and chewy. the 3rd batch i used white sugar insted of the cinnamon again perfect.
