Yield: Serves 4
- 4 large apples
- 1/2 cup light brown sugar, packed
- 1/2 cup quick oats
- 4 tablespoons butter
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 3 to 4 tablespoons coarsely chopped walnuts
Core the apples without cutting all the way through. With a sharp knife or melon baller, enlarge the center cavity, cutting out any seeds and tough center and making room for stuffing.
Butter am 8-inch square or 2-quart baking dish and arrange apples in the dish.
Stuff apples evenly with the mixture then sprinkle remaining mixture over and around the apples.
Cover the baking dish loosely with foil.
Bake for about 50 to 600 minutes, or until the apples are tender.
