Serve this tasty chicken with rice or noodles and a tossed salad.
Yield: Serves 4
Ingredients:
- 2 tablespoons canola oil or olive oil
- 3 medium onions, sliced into 1/4-inch thick rounds
- 1 tablespoon all-purpose flour
- 1 frying chicken, cut in pieces
- salt and freshly ground black pepper
- 1 pouch (8 to 12 ounces) dried prunes
- 1 can (8 ounces) tomato sauce
Preparation:
Heat oven to 325°.
Cover the bottom of a deep casserole dish with the vegetable oil. Add the onions and sprinkle them with the flour. Add half of the chicken pieces, sprinkle with salt and pepper, then top with half of the prunes. Repeat with the remaining chicken, salt and pepper, and prunes. Pour tomato sauce over all. Cover and bake for 2 hours.
Serves 4.
