Suzi's Sweet and Sour Chicken

Ingredients:

  • 1 chicken cut into pieces , or about 3 1/2 pounds of chicken parts
  • 1 jar of Smuckers orange - apricot preserves
  • 1 bottle of Wishbone Russian salad dressing
  • 1 pkg. Of dry Lipton onion soup
  • pineapple rings and maraschino cherries

Preparation:

Mix together all ingredients except cherries and pineapple rings. Pour over chicken parts. Garnish with pineapple rings and cherries. Bake in a 350° oven, covered, for 45 minutes, and uncovered for another 20 to 30 minutes, or until chicken is tender and juices run clear.
Serves 4 to 6.

Miz Suzi's Note:
Nice served over rice -- white or brown. Add green peas to the rice if you`d like. I keep a frozen bag of peas handy so I can microwave them and use as needed. The sauce is nice on the rice. We like this recipe. Any leftovers can be frozen, and the recipe can also be doubled.

"My husband found chicken breasts on sale and bought several (18) packages. Overall we have frozen, chicken and dumplings, Sweet and Sour Chicken, Barbecue Chicken, Herb Chicken, Lemon Chicken, Almond Chicken, and Chicken with Veggies. WONDERFUL way for easy meals. I prepared this recipe with one variation. I substituted peach/apricot preserves instead of the orange/apricot preserves. This recipe is easy to make! My family loves this one. Using a Seal-A-Meal, I sealed each chicken breast for future meals. The chicken breasts were large enough that my husband and I share one :) To serve, I place the package in the microwave on a reheat/casserole 2 cup setting for one side and reheat/casserole 1 cup setting for the other side. Perfect. Easy and healthy meals. Thank you Suzi for sharing this recipe."
