Chicken in Sour Cream

Serve this sour cream chicken with rice or noodles.

Cook Time: 1 hour

Ingredients:

  • 2 pounds chicken pieces
  • 1/2 cup flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter
  • 1 cup sour cream
  • 1 cup chicken broth
  • 8 ounces sliced fresh mushrooms
  • 1 1/2 teaspoons paprika

Preparation:

In a clean plastic or paper bag, combine flour with salt and pepper. Toss chicken pieces with flour mixture.

Melt butter in a casserole dish or skillet; brown chicken on all sides. Mix in sour cream, broth, mushrooms, and paprika. If the skillet is not oven-proof, transfer mixture to a casserole dish.

Cover and bake at 350° for 45 minutes, or until chicken is tender.
Serves 4.

"Everyone LOVED this recipe! I used frozen chicken tenders. I browned them just as the recipe instructed, but I removed the browned tenders from the skillet and placed them in my Le Creuset casserole before making the sauce. Then I sauteed the mushrooms in the remaining butter. In addition to the ingredients, I added 1/4 cup sherry and some toasted almond slivers to the sauce. Poured the sauce over the top of the chicken tenders and baked the casserole as directed. I served it on top of Trader Joe's ""Garlic Basil"" Linguine Pasta. Petite peas served on the side as the vegetable. A dinner salad. Perfect palate pleasing meal."
