Orange Baked Chicken with Rice

Flavorful chicken with rice, orange peel and juice, and ginger.


  • 1 can cream of mushroom soup, undiluted
  • 1 cup chicken broth
  • 1 cup instant rice
  • 1/4 teaspoon salt, or to taste
  • 2 tablespoons butter or margarine
  • 2 whole frying chickens
  • 2 tablespoons grated orange rind
  • 1/4 cup orange juice
  • 1/2 cup light corn syrup
  • 1/4 teaspoon ginger
  • salt, to taste


Combine mushroom soup, broth, rice, salt and butter or margarine in a saucepan; cover and cook according to rice directions. Fill cavities of halved fryers with rice mixture; place fryers, breast side up, in an 8 x 11-inch. Place remaining rice mixture around the chicken. Bake at 375° for 1 hour and 30 minutes, or until chicken is cooked. Combine orange peel, juice, corn syrup, ginger and salt; brush on chicken. Cook for an additional 15 minutes.
Baked chicken recipe serves 6 to 8.

Orange Chicken With Rice, Member monabeene

The ingredients calls for whole chickens and the directions are fill halved chicken with rice and put breast side up. Do you cut the birds in half or fill the whole chicken cavity with rice breast up.
