Marmalade Glazed Chicken with Biscuits

A baked chicken recipe with marmalade and orange biscuits.

Ingredients:

  • 1/2 cup sifted flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 frying chicken, about 3 to 4 pounds, cut up
  • 1/2 cup shortening
  • 2/3 cup marmalade, divided
  • 6 biscuits
  • 2 cups biscuit mix
  • 2 teaspoons grated orange rind
  • 2/3 cup orange juice

Preparation:

Combine flour, salt and pepper; dredge chicken parts in flour mixture. Melt shortening in a heavy skillet; brown chicken pieces; cover and cook over low heat until chicken is tender. Place chicken in a greased 11 x 9-inch baking dish. Spread marmalade over chicken, reserving 2 tablespoons for biscuits.

Combine biscuit mix, orange rind and juice. Roll out; cut into 1 1/2- inch rounds (about 12 biscuits). Place around edge of baking dish. Make a dent in the top of each biscuit and fill with 1/2 teaspoon of marmalade. Bake at 425° for 15 minutes, or until biscuits are browned.
Marmalade chicken recipe serves 6.
