(This chicken recipe is an old favorite, baked chicken with Russian dressing and apricot preserves.
Cook Time: 1 hour, 30 minutes
Ingredients:
- 3 to 4 pounds chicken parts (or 1 broiler-fryer, cut up)
- 1/2 cup Russian dressing
- 1 envelope onion soup mix
- 2/3 cup apricot preserves
- water
Preparation:
Place chicken pieces in a shallow baking dish. In a bowl, combine dressing, soup mix, and preserves with a small amount of water. Pour mixture over the chicken. Bake at 350° for 1 1/4 to 1 1/2 hours, or until chicken is tender.
Sweet and Sour Chicken serves 4.
