Oven Barbecued Chicken

This chicken is baked with a homemade barbecue sauce.

Cook Time: 1 hour, 15 minutes

Ingredients:

  • 2 tablespoons vegetable oil
  • 3 to 4 pounds chicken pieces
  • 1/2 cup chopped onion
  • 3 tablespoons butter
  • 3/4 cup ketchup
  • 1/3 cup vinegar
  • 3 tablespoons brown sugar
  • 1/4 cup water
  • 2 teaspoons prepared mustard
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Preparation:

In a large skillet over medium heat; heat oil. Fry chicken until browned. Drain off fat and place chicken in a roasting pan or baking dish 13x9x2-inches in size. In a saucepan, melt the butter; sauté chopped onion until tender. Add remaining ingredients. Reduce heat and simmer for 10 to 15 minutes. Pour sauce over chicken and bake at 350° for 1 hour, or until chicken is tender and juices run clear. Baste occasionally.
Oven barbecued chicken serves 4 to 6.

"This was very easy to make, and very delicious. The chicken came out tender and juicy and very flavorful, and I loved the barbecue sauce. Note: I made a reduced sugar version: Instead of brown sugar I used 1 tablespoon of Rapidura and replaced the other the two tablespoons of sugar with Stevia (2/8 teaspoon of KAL brand white stevia powder)."
