Easy Broiled Chicken with Herbs

Butter, thyme, garlic, and lemon juice flavor this tasty broiled chicken.


  • 1 3-3 1/2 lb frying chicken, quartered
  • 1 1/2 teaspoons salt
  • 1 1/4 teaspoons freshly ground black pepper
  • 3/4 teaspoon finely minced garlic
  • 1/2 teaspoon ground thyme
  • 2 teaspoons fresh chopped parsley
  • 2 teaspoons fresh lemon juice
  • 5 tablespoons butter


Sprinkle chicken pieces with salt, pepper, garlic, thyme, parsley, and lemon juice, turning to sprinkle on all sides. Preheat broiler, broiling pan, and broiler rack.

Melt the butter over low heat in a small saucepan. Pour half the melted butter on the skin side of the chicken pieces, then place pieces skin side down on the hot broiling rack. Pour the remaining butter over chicken pieces and broil, about 8 inches from the heat source, for 20 minutes on each side. Serve with the juices, if desired

My children love this recipe and it is so easy we use it for hurry-up dinners. I use less pepper and more garlic, and since our oven is a little hotter we reduced the second side of baking to 15 minutes. A favorite here!
