Baked Ham Slices With Pineapple Sauce Recipe

Ham and pineapple go together beautifully, and this baked dish is a great example. Leftover baked ham slices are called for, but purchased ham steaks or thick-sliced ham from the deli are excellent alternatives. Allow about 4 to 6 ounces of ham per person (less for children).

The pineapple juice and raisins make a delicious thickened sauce for the ham. If you like a sweeter sauce, add a tablespoon or two of brown sugar to the pineapple juice mixture. See the notes for a sweet and sour sauce alternative.

Serve the ham with sweet potatoes or rice and green beans or broccoli for a delicious everyday dinner.

Ingredients

  • 12 slices cooked ham, leftovers

  • 1 (20-ounce) can pineapple, slices or chunks

  • 1 cup raisins

  • 1 cup pineapple juice

  • 1 cup water

  • 2 tablespoons cornstarch

Steps to Make It

  1. Preheat the oven to 350 F.

  2. Arrange half of the ham slices in shallow baking dish. 

  3. Place the pineapple slices over ham slices and then top with remaining ham slices.

  4. In a saucepan over low heat, combine the raisins, pineapple juice, and water.

  5. Place the saucepan over high heat and bring to a boil. Reduce the heat to low and simmer for about 8 to 10 minutes to reduce slightly and concentrate flavors.

  6. In a small bowl or cup, combine the cornstarch with 2 tablespoons cold water. Blend until smooth and then stir it into hot sauce mixture.

  7. Continue cooking the sauce until the mixture is thickened and smooth, stirring constantly.

  8. Pour the sauce over ham slices and pineapple.

  9. Bake the ham and pineapple sauce in the preheated oven for 20 to 25 minutes.

  10. Serve each portion with some pineapple and sauce.

Tips

  • What is a simmer? When food is simmered, it is cooked at a temperature which is just below the boiling point of 212 F. Look for a temperature of around 185 F to 195 F. The top of the sauce will show some movement and it will have a bubble or two every few seconds.
  • It can be very difficult, if not impossible, to simmer food on some stovetops, even with a heat diffuser. If you have difficulty maintaining a simmer on your stovetop, cook the sauce until the flavors are concentrated to your liking. A portable induction cooktop is an excellent solution.

Recipe Variation

  • For sweet and sour ham, omit the raisins. To the pineapple juice and water, add 1/4 cup of rice vinegar, 1/2 to 3/4 cup of brown sugar, 1 tablespoon of soy sauce, and 3 tablespoons of ketchup. Simmer as directed and then thicken with the cornstarch slurry. If desired, sprinkle chunks or strips of bell pepper over the ham along with the pineapple slices or tidbits. Pour the sauce over the ham and bake as directed.
