Cook Time: 2 hours
Ingredients:
- 1/2 cup packed brown sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 3 cups orange juice
- 6 small sweet potatoes, pared and halved (or enough for 6 people)
- 2 cups dried mixed fruits, about 11 ounces
- 1 boneless smoked pork shoulder, about 2 to 3 pounds
Preparation:
Combine first 4 ingredients in a saucepan. gradually stir in the orange juice, stirring until smooth. Bring mixture to a boil over medium heat, stirring constantly, and continue boiling and stirring for 1 minute. In a 13x9-inch baking pan, place the smoked pork roast. Arrange sweet potatoes and fruit around the meat, then pour orange sauce over all. Bake in a 325° oven for 2 hours, basting occasionally. A meat thermometer should register 170° and potatoes will be tender. Serves 6.
