Roast Smoked Pork Shoulder With Sweet Potatoes

Roasted smoked pork shoulder recipe, made with a boneless smoked pork shoulder, sweet potatoes, dried fruit, and brown sugar, along with other seasonings.

Cook Time: 2 hours

Ingredients:

  • 1/2 cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 3 cups orange juice
  • 6 small sweet potatoes, pared and halved (or enough for 6 people)
  • 2 cups dried mixed fruits, about 11 ounces
  • 1 boneless smoked pork shoulder, about 2 to 3 pounds

Preparation:

Combine first 4 ingredients in a saucepan. gradually stir in the orange juice, stirring until smooth. Bring mixture to a boil over medium heat, stirring constantly, and continue boiling and stirring for 1 minute. In a 13x9-inch baking pan, place the smoked pork roast. Arrange sweet potatoes and fruit around the meat, then pour orange sauce over all. Bake in a 325° oven for 2 hours, basting occasionally. A meat thermometer should register 170° and potatoes will be tender. Serves 6.
