Southern-Style Fresh Ham Bake

Begin this fresh ham recipe a day in advance. This would make a great weekend meal for the whole family.

Ingredients:

  • 1 fresh ham, about 5 pounds
  • whole cloves
  • 1 large bay leaf
  • dash crushed red pepper, or 1 small red pepper pod
  • 1 small cinnamon stick
  • 2 tablespoons salt
  • 1 tablespoon dry mustard
  • 2 teaspoons prepared horseradish
  • dash garlic powder
  • 1/2 cup light brown sugar, packed

Preparation:

Place ham in a large pot; cover with boiling water. Add 4 whole cloves, the bay leaf, red pepper, and cinnamon stick. Simmer for 3 hours. Refrigerate in broth overnight. Remove rind. Combine mustard and horseradish; rub over the ham. Bake at 300° for 2 hours. Score fat with a knife and insert whole cloves evenly, about every 2 to 3 inches. Sprinkle ham with brown sugar. Bake for 1 hour longer. Serves 8.

Don't forget the salt, Member jere_messiah

The directions failed to include adding the 2 tablespoons of salt to the boil (a very necessary step for curing the meat before baking.) Of course I should have realized this before, but alas, I only realized the salt was missing after refrigerating the meat in a salt-less broth over night... I'm going to try again with the salt included.
