These sliced potatoes are delicious, and they couldn't be easier! Toss in butter, sprinkle with seasonings, then bake the potato slices to perfection. These potatoes make a great side dish for skillet chicken dishes, pork chops, and steaks. And they make a delicious potato dish for a special breakfast or brunch.

Prep Time: 10 minutes

Cook Time: 18 minutes

Total Time: 28 minutes

Yield: Serves 4 to 6

Ingredients:

  • 4 medium baked potatoes, cooled, about 6 to 8 ounces each
  • 3 tablespoons melted butter
  • sea salt
  • freshly ground black pepper
  • garlic powder, optional
  • onion powder, optional

Preparation:

Heat oven to 425°. Line a baking pan with foil and spray with nonstick cooking spray.

Inspect the cooled baked potatoes and remove any imperfections. Slice the unpeeled baked potatoes into rounds about 1/8 to 1/4-inch thick.

Toss the potato slices with the melted butter.

Spread out on the prepared baking pan and sprinkle with salt, pepper, and onion and garlic powders, if using. Bake for about 15 to 20 minutes, or until tender and lightly browned, turning about every 4 to 5 minutes.

Serves 4 to 6.

I will try these two changes. Save calories and just use buttery spray on the slices. Dust them lightly with fresh ground pepper before baking. Let your friends decide if they want to add salt. I recommend avocado oil, expensive but worth it for fighting cholesterol, instead of an immersion in butter. It fights LDL and promotes HDL. I cheat by adding 1 tsp. butter to 2 tbsp. avocado oil. I wanted a base of potatoes to use in other recipes. Thanks to Ms. Rattray, I have a great one!
