Baked Herbed Potatoes

Potatoes are sliced and baked with butter and basil, and sliced onion.

Ingredients:

  • 3 medium potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 1 teaspoon dried basil or oregano
  • 2 tablespoons melted butter

Preparation:

Put half of the sliced potatoes and half of the sliced onions in a buttered 9-inch pie plate. Sprinkle with half of the dried herbs and drizzle with 1 tablespoon of the butter. Repeat layers, ending with remaining melted butter. Season with salt and pepper, to taste.

Cover plate with foil. Bake at 425° for 20 minutes. Uncover and bake for 15 to 20 minutes longer, or until potatoes are tender.

Serves 4.

Tweaked the recipe...., Member bkbauder1

This is a good starter recipe but, definitely pretty bland if not tweaked. First off I cut the potatoes and diced some onions. I then put those in a pan. I topped with olive oil spread with added sea salt and some garlic(fresh or garlic salt works). Instead of baking I threw it on the grill with some aluminum foil on it. About 10 minutes before they were done, I cut a hole in the aluminum foil to draw some of the smokiness taste into them..They were absolutely wonderful! FANTASTIC. These are always a hit when we are grilling!!!!!!!!!
