Roasted Garlic Potatoes Recipe
An easy recipe for roasted garlic potatoes.


  • vegetable cooking spray or a little olive oil
  • 1 3/4 pounds baking potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon coarse (kosher) salt
  • 4 cloves garlic, minced


Spray an 11x7-inch baking dish with cooking spray, or oil.
Preheat oven to 425°. Combine remaining ingredients in a bowl; toss well to coat thoroughly. Let coated potatoes stand 10 minutes. Spoon potato mixture into an 11 x 7-inch baking dish coated with cooking spray. Bake for 35 minutes or until tender and lightly browned, stirring occasionally.

Great recipe for cutting calories, Member Connieotts

This is a great potato dish filled with flavor and not a lot of extra calories. I calculated the recipe for 6 servings and the calories is 147 per serving. This sure beats a plain baked potato. I leave the skin on and bake in a convection oven to increase browning. I am going to experiment and use other seasoning in the future.
