Ingredients:
- vegetable cooking spray or a little olive oil
- 1 3/4 pounds baking potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon coarse (kosher) salt
- 4 cloves garlic, minced
Preparation:
Spray an 11x7-inch baking dish with cooking spray, or oil.
Preheat oven to 425°. Combine remaining ingredients in a bowl; toss well to coat thoroughly. Let coated potatoes stand 10 minutes. Spoon potato mixture into an 11 x 7-inch baking dish coated with cooking spray. Bake for 35 minutes or until tender and lightly browned, stirring occasionally.
