Easy Roasted Potatoes

Ingredients:

  • 4 medium baking potatoes (about 1 1/2 pounds), unpeeled
  • 2 cloves garlic, minced
  • 3 tablespoons vegetable oil
  • salt and freshly ground black pepper, to taste
  • 1 1/2 teaspoons dried leaf oregano
  • 1 tablespoon paprika

Preparation:

Scrub the potatoes, dry them, and cut them into eight wedges, lengthwise.

Place in a large, oiled, shallow baking dish that will hold the wedges in a single layer. Sprinkle with the remaining ingredients. With your hands, roll in all ingredients until the potatoes are thoroughly coated.

Bake at 400° oven for 1 hour, or until the potatoes are tender and can be pierced easily with a fork.
Serves 4 to 6.
