Banana Bread With Chocolate Chips

Chocolate Chip Banana Bread

A flavorful banana bread recipe with chocolate chips, from Mitzi.

Cook Time: 40 minutes

Ingredients:

  • 1 cup granulated sugar
  • 4 ounces butter, softened
  • 1 1/2 cups mashed bananas
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

Preparation:

Cream sugar and butter; beat in the mashed bananas, eggs, and vanilla. Combine dry ingredients and stir into the first mixture just until moistened Fold in chocolate chips until well incorporated. Pour batter into greased and floured 9x5x3-inch loaf pan. Cover loosely with a tent of aluminum foil. Bake at 325° for 30 minutes. Remove foil and continue baking for 3o to 40 minutes or until wooden pick inserted tests done. Cool for 10 minutes, remove from pan and cool banana bread completely before slicing.

"I adapted the recipe for vegans. I omitted eggs and added 1 TBS tapioca flour. I also substituted one cup of whole wheat pastry flour for half the regular flour. I also liked the mini loaf better. It is hard to get the center of the large loaf done without it collapsing in the middle, even when fully cooked. Cannot beat the flavor, I get requests for it from non-vegans. (I use Earth Balance shortening or whipped buttery spread) I can't detect any difference between the vegan version and regular, so try it if you are out of eggs or if you want it to be healthier."
