Banana Bread Recipe with Bran

Banana bread recipe with bran cereral, butter, and other ingredients.

Cook Time: 60 minutes

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups mashed banana, about 2 large or 3 small bananas
  • 1 1/2 cups bran cereal
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup coarsely chopped pecans or walnuts

Preparation:

In a bowl, stir together the flour, baking powder, baking soda, and salt; set aside.

In a mixing bowl, combine mashed bananas and bran cereal. Let stand for a few minutes, until cereal is softened.

In a large mixing bowl, beat butter and sugar together. Beat in eggs; mix well. Mix in banana mixture. Stir in flour mixture and chopped pecans or walnuts. Spread batter in a greased and floured 9x5x3-inch loaf pan. Bake at 350° for about 55 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Let cool in pan for 10 minutes; remove to rack to cool completely.

"My family and I loved this recipe. I did not tell anyone about the bran and they were none the wiser. I have a hard time leaving any recipe exactly as is. I doubled the recipe. I added an extra egg (My large eggs seemed small), 1 tsp cinnamon, two dashes nutmeg and 1 tsp or so of vanilla. I sprinkled some butterscotch chips on top for something special. The batter seemed a little thick, but he texture of the finished bread was very good. I did have to bake it extra time probably because I made 4 loaves. Yummy."
