Banana Pecan Bread - Banana Bread Recipe with Pecans

Banana bread recipe for the bread machine, from our forum. Scroll down to see more banana bread recipes.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2/3 cup Sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 2 extra-large eggs, lightly beaten
  • 1/4 cup sour cream or plain or vanilla yogurt
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed banana
  • 1/3 cup finely chopped pecans

Preparation:

Into the baking pan measure flour, sugar, baking powder, soda, and salt. Add oil, eggs, sour cream or yogurt, and vanilla. Insert pan securely into unit; close lid. Select CAKE setting; press "Start." When beep sounds after about 5 minutes, add mashed banana and chopped pecans. Press "Start" again. (follow your machine's instructions for cakes)

Carefully remove pan from unit, using mitts or pot holders. Turn bread out onto cooling rack. Cool thoroughly. Slice thinly to serve. Makes 1 5x4-inch loaf.

Banana-Chocolate Chip Bread: Prepare bread as above through "Cake" setting. When beep sounds, add mashed banana and 1/3 cup chopped chocolate chips. Omit nuts. Continue as directed.

"My husband and I love banana bread - we have been eating it for breakfast almost every morning for the last few years. We have our own recipe that we've perfected and love, but I decided to try this recipe because it was for use in a breadmaker and I just bought a new one (Zojirushi BBCC-X20). This bread has a unique and tasty flavor and we loved it. It is very moist, and doesn't dry out when stored in a covered plastic container for a few days. This bread turned out very well - I sifted all the ingredients, used the sour cream instead of the yogurt and added a cup of chocolate chips along with the nuts. Also, my bananas were very ripe. I plan to make this bread and give it as gifts to my neighbors. I figure if it tastes this good, I ought to share it. Hope you enjoy it as much as we did!"
