Lentils, Sausage, and Rice

This lentil and sausage combination is similar to red beans and rice, and my family loves it this way. This dish is is hearty and healthy, and it's easy on the budget. French green lentils are delicious in this, and brown lentils would also work well.

Ingredients:

  • 1 pound lentils, rinsed and cooked with broth following package directions
  • 1 tablespoon olive oil
  • 2 medium onions, coarsely chopped
  • 1 cup diced carrots
  • 1/2 chopped celery
  • 1 pound andouille-style smoked sausage, sliced, or use a chicken or turkey smoked sausage
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning blend
  • 1/4 teaspoon ground black pepper

Preparation:

Transfer the cooked lentils and broth to the slow cooker and set aside.

In a large skillet overn medium heat, saute the onions, carrots, celery, and sausage in the olive oil until the onions are lightly browned. Add the garlic, Cajun seasoning blend, and pepper. Cook for 1 minute longer. In a 3 1/2 to 5 quart slow cooker, combine the lentils with the cooked vegetables and sausage. Cover and cook on LOW for 5 to 7 hours.
Serves 4 to 6.
